I've been looking at this laptop:

It looks great, but I need 3 years of accidental damage coverage since I'll be taking this notebook to class with me every day. On their product page, they advertise an optional 2 or 3 year Accidental damage coverage plan:

So how do I get that extra coverage? There is no option for it when configuring the Warranty on XoticPC's webiste when configuring the laptop. And I can't make much use of Asus' website, since they seem to require you to be an Asus owner to get warranty info. Anyone know if it is possible to get more than 1 year Accidental damage protection?

No, you can't from Asus afaik- the ADP policy is a marketing product to distinguish from the competition. In any event, pretty much any ADP would be limited to 1 replacement during the course of the coverage (as Asus' current 1 yr ADP reads); that sort of thing isn't unlimited license to keep breaking notebooks and keep getting a replacement.
From Excal's link you list above, which is directly ported from Asus NA website - Asus' standard coverage is 2 years global, with optional extension to purchase a third year at the time of initial purchase, with 1 year ADP during the first 12 months of ownership if you register the notebook before 60 days after purchase.
You'd have to talk directly with Excaliber about any additional ADP options from Asus, that's a new one to me. There is a 2-3 year LCD ADP product offered in Excaliber's customize page under Warranty, but I'm pretty sure that is something that Excaliber is offering independently - i.e. it's administered by them, not Asus (you should still call Excaliber to confirm/refute this assumption).
There used to be an insurance company that would sell notebook replacement policies, but that was a long time ago and I can't remember any other details. Some renter's or homeowners policies can provide replacement coverage, but generally the increase in your premiums should you exercise that option would vastly exceed the cost of a new notebook over just a couple of years....
You need to just be careful with your notebook, as you would with any other piece of expensive technology.
