While normally I just use the HDMI output for a secondary display, I am trying a setup with a 3rd display and that necessitates the use of the VGA out at the rear of the unit.

The issue is that it's not detecting my monitor (Samsung SyncMaster PX2370) using the VGA -> DVI adapter cable that came with the monitor. The monitor itself detects that it is plugged in to something (tells me to check signal cable if I unplug it from the notebook.. and stops when I plug it in).

I don't believe you can setup 3 displays with the N53 laptop despite having 2 video ports. You can only output one display at a time or extending/clone your laptop display to one external monitor.

That may be, however that still doesn't explain why it will not detect the monitor if plugged in to the VGA port (with no 3rd display in the HDMI port).
