GPU core and video RAM speed matters the most than the video RAM capacity, imagine put 2GB video RAM on Intel GMA X3100, it still gonna run slow.

8600GT 256 (ddr3) or 8600GT 512 (ddr2)?
I used both but 8600GT 512 (ddr2) is reliable. -
The 8600m GT 256mb GDDR3 will be faster. I have both myself and I can swap both out in my laptop, I've found both to be 110% reliable which was never an issue, however, the GDDR3 dominates the DDR2 in every way except dedicated texture memory - BUT< the speed of the GDDR3 makes of the slack easily.
