i did exact same upgrade for G1S. its a good one! so itll certainly work. Youll have to install vista on that hdd too yes. The easiest way is to dowload prgrms that make an image of your old hdd, and put that on the new one
    (example: acronis true image)

to transfer the files youll need an case for an external hdd...

Seagate makes a cloning tool you can download from their website, or you can use something like Norton Ghost or Acronis TrueImage.

Get an external 2.5" SATA enclosure, insert the 320, use the Seagate tool to clone your G1 hdd, turn the G1 off, install the 320 into your G1, reboot and you're done.

    Happy upgrading!

-u might wanna get an external enclosure with eSATA, which could be a little more expensive, but its way faster then usb!

If I recall correctly, you might have to enable eSATA in BIOS for it to work in the G1.

Many eSATA external drive will require an external power source (either a power adapter or via USB)

But to answer your original question, any SATA 2.5" hard drive will work on your G1. When you upgrade your hard drive you can just use the recovery DVD to install Vista and all the necessary drivers automatically. OR you can clone your new hard drive with the old - this requires a cloning software such as Acronis (or as Clearskies mentioned, with Seagate tool) and an external hard drive closure.
