A couple of weeks ago I was on Dell's website and was looking at the sxps and they offered the core i7, now when you get on there and look they Don't offer it anymore. Am I just missing something or did they stop selling the core i7's in the studio xps?

Are you sure you checked thoroughly? I still see it configurable with i7...although I'm on the Canadian site.
