Whenever I plug in my USB-C to ethernet adapter, the fans always kick in - and when I remove it the fans die off within a minute or so.
I've looked around and seen that some people have had this issue - but none of them have reported any solution.
    Anybody resolved this issue?
So far, all I've done is update my drivers.

Probably not much you can do, except to maybe keep your eye out for new BIOS'es for that laptop.

The reason the fan spins up is because you're engaging a new controller chip (the Thunderbolt controller chip), which adds heat to the system. The system fan profile is configured to begin spinning the fans at certain temperatures to push out the generated heat.

Not much you can do, except to hope that someday, a new BIOS is released that adjusts the fan profiles. It's unlikely, but it's pretty much the only way it would change anything.
