When i ordered my Dell Vostro 1400 the Dell rep told me that upgrading Ram myself would void the 1 year warranty that comes with the laptop. Is this true or was he lying to try and force me to buy 2GB of RAM?

It would only void the warranty on your RAM, which most probably would have a lifetime warranty anyways from the RAM manufacturer. However, if does not void the warranty of the entire computer.

Absolutely not. Dell actually provides very detailed instructions on how to do stuff like that.

Only if you break the ram or part of the computer trying to install it.

False, however, if you break your notebook(through force, short circuiting, etc.) while upgrading the RAM/HD, then yes, it will void the warranty :)
