What's the best config for an E1505 configured just above the $2000 requirement to use the $750+$100 off coupons? Here is what I have:

It's pretty good - someone else did better through their EPP. And you could get an additional 2% off if you apply or use your DPA

Is it better to go up a step higher in the processor and go down to a 60Gb, 7200 RPM, or should I leave those 2 as is?
Is the screen upgrade worth it, or does it not matter? -
if i remember correctly, the performance benefit from the 2.0ghz isn't all that much better than the 1.83

Look at what that did to your total price though - $1,856
That's only about $100 less than what I paid for my Latitude D820 and got better features out of the deal.
