I found a refurb with the specs I think I'll be happy with, so I took the plunge and ordered. Here's what I got for $989 ($1091 after taxes and shipping):

    Dell Latitude D610 Notebook: Intel Pentium M Processor 730 (1.60GHz) 14.1 XGA, RADEON X300

    Microsoft Windows XP Professional
    Memory: 512 MB DDR2 SDRAM 400MHz (2 DIMM)
    No Floppy Drive
60 GB EIDE Hard Drive (5400 RPM)
    14.1 inch XGA Notebook Screen
    Internal 56K Modem
Intel PRO/Wireless 2200 mini PCI Card
DVD Drive: 8x DVD +/- RW w/dbl layer write capability
    Software CD
    Operating System Software CD
    Power DVD Software
    Record Now! Deluxe Software
    6 Cell Battery
    65W Adapter

I know one 512MB DIMM and the SXGA screen would have been better but the memory is easily and cheaply upgraded and the screen is not a huge deal to me like it is to a lot of people. The DVD-R/W, Radeon, and HDD upgrades were more important to me, especially for under $1K.

Any thoughts on additional aftermarket upgrades/additions?

Thanks to everyone here for their input on previous posts!

I wouldn't put a whole lot more into what you have there, maybe an extended life battery if you're on the road or away from power for extended periods but honestly i think you got a great price for the specs and there's not really much you need to add in the way of hardware.
