The max memory is stated at 1GB, but I was reading on Wikipedia that some people claim its able to support 2 GB. Trying to find out who right?

Im pretty sure it will be 1gb for almost all purposes, unless the computer supports a stick of 2GB RAM.

But its just not too smart to get a stick of 2GB RAM, because most people are fine with 1GB ram, and 2GB ram sticks cost an arm and a leg

No, It is 1GB, I am certain about that.

If you are uncertain on how to install your RAM, it will be in the "Add Parts" section of your Solution Guide.

You need to undo a small screw holding in a panel on the underside of the laptop. I think the Panel will have a letter "P" engraved next to it. Press on the two clips holding the stick of RAM down. Gently pull the old stick out if you have to, and gently push the new stick in, and then very lightly, push the clip holder back down into it's original position. Make sure you touch one of the metal connectors on the back before opening the cover.

    so why?

The Dell documentation says that the I8200 can only have a maximum of 1 GB of RAM. However, some I8200 owners have put 1 GB Modules in their systems for a maximum of 2 GB of memory. You can order them from Dell here. Or from Crucial here. In September, got two "KINGMAX 200-Pin 1GB DDR SODIMM PC-2100, Model MSDD42D-KI" modules from NewEgg.com and have been running fine ever since. I paid $193 for each module.

I found this at dell 8200 faq also wikipedia said the same.

They sell 1GB RAM sticks as you can take your stick of 512MB and put in a 1GB stick. It will be cheaper to buy a 512MB stick to make a total of 1GB togeather with your existing RAM. Having two RAM sticks is known as Dual Channel Memory and offers poorer performance compared to single 1GB RAM stick.

The maximum IS 1GB. Maybe some people messed around with their Motherboard and BIOS to allocate 2GB of RAM. I do not recommend this however. If your solutions guide does say that maxium is 1GB then I really would not recommend putting 2 1GB RAM sticks in.
