Which of these two do you think I would do better with?

    2GB + 512MB of RAM
    1GB + 1GB of RAM

its about the same price and I just want to know which one would be better for gaming, and multi-tasking.

I was just about to ask the same question. I ordered only 1GB from Dell since their RAM is EXPENSIVE!

    most people question about 2 + 1 vs 1 + 1
there, the general consensus is that the extra memory outweighs the speed bonus from having dual channel

one could assume the same applies here, though the extra memory is smaller in this case :)

    2GB + 512MB.

Dual channel does not necessarily need two matched paris of memory. The latest Intel chipsets are capable of running DC with unmatched pair. Plus the benefits of the extra memory outweigh the benefits of DC memory although in your case it wont be much. Also getting 1X2GB stick will make future upgrade(if you want to) to 4GB easier.

Benefits depend on the application. For example, I saw my 3DMARK06 score drop 245 points (5359 to 5114) when going from 1GB dual channel to 1.5GB single channel. This on an AMD NF4-based desktop with 8800 GTS 640MB video. Depending on your hardware, YMMV.
