SLI isn't 100% efficient, and a single Go 7950 GTX is indeed almost exactly half as powerful as the 8800 GTX. Some benchmarks: (The 8800 GTX's numbers taken from the Firing Squad review)
FEAR, 1920x1200, 4xAA, max settings:
My Go 7950 GTX: 34 FPS
8800 GTX: 69 FPS
HL2: Lost Coast, 1920x1200, 4xAA:
Go 7950 GTX: 60.44 FPS
8800 GTX: 126.1 FPS
Oblivion Foliage area, 1920x1200, 0xAA:
Go 7950 GTX: hovers around 25 FPS
8800 GTX: 52.7 FPS
It remains to be seen what kind of effect DX10 will have on performance. Going by previous examples it doesn't look too good, but I'll give DX10 the benefit of the doubt, and perhaps it will indeed bring a performance boost over DX9.

I believe the desktop version of graphics cards are more powerful than their mobile counterparts so the 7900GTX would be closer to the 8800GTX.

Will I be able to play the game even if I have a lower GHz then the minimum requirement? -
here's mine, desktop of course.
X2 4800+ @ 2.4GHz, 2GB RAM, 2 x 7900GT SLI, Raptor drive. Had it just over a year which in the computer world, its considered old, but still runs everything I throw at it smoothly.
EDIT: making sure that this will run Crysis. -

Except the trend of 8800 series pricing contradicts your statement.
On topic: The requirements are ridiculous and is part of a trend why so many more games are being targeted towards consoles (R6:Vegas, Bioshock, UT3, etc.). In the end, PC gamers lose out. -
You know what? Why can't someone make a console that has the same interface as a PC? I just can't get used to aiming with an analog stick/joystick. Or even...*gasp! the Wiimote.

I think we just have to accept some things will be better at some than others. Consoles have come a long way but cannot be the ultimate everything when once upon a time gaming on PC's was above and beyond anything else.
I still believe nowadays FPS are much better on PC, your PC setup is usually in a favourable setup, the mouse/keyboard on a desk, LCD in a fair distance from you.
I find most games are better on consoles especially if you get together with your buddies on a weekend. I really believe the PC will dominate FPS over consoles until virtual reality comes out. -
