Do you believe that two desktop 560TIs or two 580Ms are more than likely with an i5 or i7 processor (8GB Ram 1333) allow upcoming games..specifically Skyrim and Star Wars the Old Republic Online...to be run at max at 1920x1080 settings...or at least on a desktop its worth going higher in SLI or crossfire?

I would say that a single desktop 560ti alone makes a great job, to be sure for the future you could buy another one in SLI; -
It is definitely slower than a desktop GTX 560TI, could possibly be overclocked to GTX 560 TI specs at least.

like everyone said its a slower clocked version of the desktop 560 ti.
speedwise its like a gtx 460 maybe even slightly slower -
It is the exact same architecture as the 560TI, just heavily underclocked. Same shaders, ROPS, etc.
A single gtx 580m should easily max out SWTOR with no problems.
Skyrim? I would think so as well, but that one might be a bit tougher -
