So um, i'm kinda new to the PC gaming world and would like to ask a couple of questions before I buy a laptop.

What's the difference between the 600,700,and 800 series NVidia cards (performance wise)?

Would an 680m out perform a 760/770m and a 860m? or would every 800 series cards out perform all 600 and 700 series cards?
Is it only the last two digits of the graphics card number that matters? Please explain in a simple way without the use of too many tech jargons. Thanks!

P.S. i'm thinking of getting the ROG g750jm (with 860m 2gb) - does this laptop have a good rep?

Go to notebookcheck.net, they have a list of mobile gpu's ordered by performance. Bottom line 680m>860m>770m

Just take a peek at this URL. The list ordered by performance is on the right. There's also a more complicated list with to look at benchmarks and filter by various values.

It usually works out the the previous one step down is practically equal to the new on step up. Ex.: 680-770m-860m(maxwell). The newer card usually have lower power consumption too. In your specific case the 860m is a Kepler(old gen.) so it is more 765m than 860m ought be. So the 860m in the ROG is a mid range gpu. What are your uses so that we can help you out better?
