Without AA, you'll see the 'stair-stepping' effect on the edges of objects, walls, etc. Enabling AA smooths out those edges by taking the edge of the polygon and blending the colors on either side of it to make it look smooth. Enabling AA at higher resolutions will, depending on the game, take a chunk out of the framerates because much more processing power is required to deal with the smoothing of edges.

I wouldn't worry about the benchmarks - for games, see what works. Monitor your framerate in games, and if it is over 60 then enable some AA and see what it does. Shoot for 50-60FPS as your target frame rates to stay around, that ensures the best experience for gaming.

V-sync caps your fps at your monitors refresh rate.

antistropic is texture filtering. it filters and scales textures to make them look real and nice. it really helps with textures far away. they look good faraway.

meaning that textures on the ground (or other places) look good from a distance

You'll take far less of a performance hit if you enable AF, which makes textures look better as deedeeman said. I wouldn't push the AA further than 4X for any particular game. Make sure you monitor your framerates.

With a 7800GTX, both AA and AF should at least be on 2X

what game are you playing though that needs this? That can vary
