I have this bad habit of pressing CAPS LOCK on and off whenever I'm waiting for something to happen, and for some reason everytime I do this (and I believe when I press M to read about different things) it changes from fullscreen back to windowed mode! But when I go to graphics options, change it to something else, apply, then revert back to previous graphical settings, it goes back to full screen! What's going on :S

Hmmm, not sure but on a lot of games you can press Alt+Enter to switch between windowed mode and full screen while in game. Try that next time.
