Hi guys, I'm wondering if hiding a game's settings/saved game folder in My Documents would prevent the game from saving data, settings, etc. Or would it depend on the game?

Even while hidden the folder is still accessable, so it wont matter.

If you want to break your games and prevent them from saving, you should lock write access to the relevant folders

Games can store data pretty much anywhere they want. It used to be common to store it in the Program Files right alongside the game itself but with Windows Vista Microsoft wanted to stop files writing to the Programs Files, so there is actually an entire virtual program files directory ("%appdata%/Local/VirtualStore/Programs Files/") for programs that still do this. Heck, some games even store all the necessary data in the registry (why?). It will vary from game to game.

For OS Vista and WIN 7, games, adobe, VMware or any utility files,
store in the user>appdata>local & it’s temp directory. Don’t forget the registry.
If gaming packages are being installed and removed for evaluation, then traces
will also be left in the registry.
Keep an eye on the appdata Dir for cleaning opportunities. Use something like Free Comodo System Cleaner V4.XX for registry audits/cleaning, and privacy audits/cleaning.
CSU is no toy, if using, backup PC, manual set a restore point. Then in CSU settings,
check boxes for backup and restore points. Then let CSU scan. Perform a visual
audit. Example: CSU listed 800 keys from gaming software that were removed long ago. Check and Delete. Again, CSU is very aggressive. Audit first, or CSU will clean the clock.
