Recommend good games to play that don't require a mouse. It can be anything, 2D/3D platforming, racing, etc. I want to get a good list for those times when mice can't be deployed, like on airplanes.
I'll start with a SNES emulator and pretty much any game (especially Contra 1/2).

Assuming you have the touchpad keyboard, Avadon: The black fortress should be easy enough to play. In this regard, any turn-based games should be fine with the touchpad I presume.
P.S.
One precaution for SMB: You might end up cursing very loudly, which can be bad for other people on the plane. -
SMB is NOT for the faint of heart and should ONLY be played out of voice range of anyone!

If your trackpad doesn't suck, you could probably get away with playing Frozen Synapse.

I assume you have trackpad? so you can play civilization, heroes of might and magic and any turn based strategy.

Gish is brilliant and fits your bill. I personally play a lot of old-school point and click adventure games in that kind of situation, since mouse speed is rarely an issue with them. Of course, SNES emulation is my backup as well.

I think it's unanimous that:
1) Anything driving
2) Anything sport
3) Anything (not actually) real-time strategy
4) Anything platforming.
will work quite well. Point-and-click I am intrigued by, and Braid looks pretty good.

GOG.com is probably the best source for good point and click adventures, since the golden age for those was 15 years ago. Good examples are the Gabriel Knight games, Monkey Island games, The Longest Journey... A more recent game with good reviews was The Whispered World, and Machinarium is a different kind of adventure game but also quite fun. There's also a lot of free community stuff out there - I can definitely recommend Nelly Cootalot: Spoonbeaks Ahoy! as a great homage to the humorous side of the genre, and Dirty Split is another very good free one with shades of a Technicolor Hitchcock. -
Splashfighters. Good MMO Fighting game and requires actual skills.

Use a controller. I dunno why, but it was much easier for me on a controller.

Freespace 2 can be played with keyboard only. And advisable unless you have a joystick handy. It just doesn't work well with a mouse, you're constantly scrolling it.

The only game I've ever had that never required a mouse was Star Trek: Hidden Evil. It's usually a given that with computer games you need a mouse (unless you can use a joystick).
I've never had a problem with it personally.

With Freespace 2 and the mouse? Or using keyboard? I wish there was a way to make your mouse so that it would act almost as a joystick, with relative positioning to a center point, with possibly an overlay on screen to see where it's at. That way if I pull my mouse down, it would move my ship up without having to constantly scroll and pick up the mouse.

I play with the mouse and keyboard.
I have no issues at all, and I believe there is an option to increase mouse speed.
