The amount of video ram is negligible, what matters is the clock speed if you are comparing the 8600GT's, is it 700mhz(GDDR3) or 400mhz(DDR2)?

I think you're reffering to the MBP as it is the only model I know of that uses the 8600GT 128mb, It is GDDR3 by the way, The performance difference hangs largely on the games you are using, some games need alot of Vram, Others function better with fast memory, Im pretty sure the 128mb scores around 3000 3dmark06 points, while the 256mb version gets around 4000.

If it isn't the Macbook pro, make sure the bus is 128 bit instead of 64 bit. That could also limit performance. But not by much, if you go by the 64bit, 128 MB Quadro FX 570 in 14" Lenovo T61p.

Not by much? Lawl. Yay for half the memory bus and buffer.

3dmark06 is not a reliable bench for 128mb cards, as it is specifically designed to use a full 256mb of dedicated VRAM, unlike previous versions. Very few games are designed to always use 256mb of VRAM, so 3dmark's assessment is not very accurate. If you compare the 3dmark05 scores, you get something like 7200 vs 8200, which is a better comparison.
No, it's not a huge difference between the 64-bit 128mb and 128-bit 128mb versions of the card in real world gaming, mostly because the 128-bit 128mb version is limited by it's VRAM size.
