    Is there a way to "force" windowed mode on games that dont offer it?

    Depends which games. Some games don't allow it so that way people don't hack.

    out of curiosity...why do people run games in windowed mode? is it to do video recording of the games or something? I ask because I tried it on a whim and found that it greatly reduced the immersion.

    It does reduce the immersion, I always play my games in fullscreen (theres even an fps drop in windowed) but its for when I play certain games online that take awhile to load the levels/find rooms like Dirt 2. (not that the game takes forever to load, if you've played online you might know what im talking about) and then I'd want to look at a guide for a game that doesn't support windowed.

    Right click the desktop icon/shortcut

    Click Properties

    Once the screen pops up, you should see text labeled "target"

    You should also see where the shortcut leads to, (ex. "C:\program files\Warcraft III\Frozen Throne.exe")

    At the very end of that line, type -window

    You should have a space after the .exe

    So, using the above example, it would look like:
    C:\program files\Warcraft III\Frozen Throne.exe -window
