Mass Effect (maybe? do you count that as FPS or RPG? kinda a fusion) -
GRID is a good racing game with pretty good visuals. Thing is if you hate FPS and RTS games you are basically taking away most of the good PC games.

Oblivion, the Witcher and Devil May Cry 4 will probably be the only games to fit the OP's tastes.

Download Steam and get:
Half-Life 2
Half-Life 2: Deathmatch
Day of Defeat: Source
Counterstrike: Source
All great games and they should run maxxed out on your computer.
Also you could get Episode 1 and 2 of Half Life 2 but they might not run at full speed if you enable the HDR etc. -
OP hates FPS games, and it's amazing how many people are still listing nothing but FPS games.
I personally couldn't list many other games other than FPS's.. but here's a few games I like.
For racing, Race Driver GRID is great, and the online is pretty good as well.
RPG, Mass effect is also a good game, graphics aren't all that great, but if that's your primary concern, you'll only find the best graphics on FPS games.
for action games, you've got Assassin's creed, which is one of my favorite action style games of all time. If you've never played it, then just ignore anyone else who complains about it, that game is fun, and the graphics are great! -

Would Assasins Creed run that well on an 8600GT? Would need to turn down the settings quite as bit? It's quite a demanding game i'd imagine based off my experience when playing it on the Xbox 360. A lot going on all at once.

Hmmm. Those are like the biggest 2 genres on PC. I was gonna say COD4 , FEAR , and company of heroes......... -
Assassin's creed was ported very well. Guild wars is fun, free online, and looks good at highest settings.
