How do you fly from Chicago to NY without getting bored for the time it takes to fly between the 2 cities? Sure, you can sightseeing but there is not much you can really see. You can monitor your instruments but what else is there to do?

You can change simulation speed and get it back to normal once you are close enough to the airport.

I know what you mean. Usually I like flying short to medium range routes in the Boeing 737-800. For maximum realism and entertainment, you can print out a Flight Sim checklist for the 737 and follow that through your flight. If it's a longer flight, as in more than two hours I usually bring out my notebook and do some homework or web browsing while monitoring the plane and responding to ATC every few minutes.
If your willing to spend some $$$ you can purchase some realistic add-on planes which really require you to be paying attention at all times along with some scenery improvements like UTX, GEX, REX and FS Passengers, etc. to make everything more realistic and interesting. I don't personally do this, but you might like it.
Of course you could always disable the auto pilot and fly the whole way manually, that should require some effort. -
During 2-3hrs flights I just reduce the size of the window and launch a movie or do some reading, while keeping an eye on the instruments. For anything longer like LAX to SYD or LGA to CDG, I just start the flight before going to bed , get to my cruising altitude and just go to bed.
The late night flights are what made me realize that FS9 real-time weather engine is god awful, I had flights fail due to the wind speed either dropping to the point where I stall and crash due to the ineptitude of the autopilot or I just overspeed and the plane just disintegrate in mid-flight. POSKY should do something about their 777, I do no think the real plane can be climb at well over 4000fpm at 40* pitch angle and keep accelerating with at full load. -
