    I heard you can upgrade it and install your own graphic cards.

    Just wondering will the ATI 5870's fit in there? What about the GTX 295?

    If not, what GPU's will fit in there?

    I don't know what will fit, and you can probably make anything fit if you mod the case. But you will lose the warrenty if you mod.

    Just be aware that the vidock 2 can't supply enough power for the most powerfull cards.

    First rule is stick with ATI, because the ATI cards work much better with the restricted bandwidth.

    Arguably the best card for this is the 4670. More powerfull cards are limited by the bandwidth.

    If you can wait for the vidock 4, that should supply enough power for pretty much any card. And most cards should fit also. But still I would stick with only ATI cards.

    This tells us HD4670 is the maximum size for ViDock2. ViDock4 appears to not have such restrictions. Though unless you are using expressport 2.0 (x1 2.0) or ViDock4 incorporates some way of adding a x2 1.0 link, you'll find the HD5870/GTX295 will be severly restricted by x1 1.0 bandwidth so anything more than a HD4670 is questionable.
