I was wondering if I could upgrade the GPU on my laptop because I upgraded to a 1080p screen and I'm pretty sure the 425M GT can't really handle it see nas how it's already a mid-range Video Card. So I also wanted to know if it is attached to the MOBO.

You'll have to find out whether your laptop model has an MXM card, but 99% of laptops don't use MXM GPUs. As such, you can be certain that you can't upgrade the GPU.

You can't stick a different mobo in there and the only gpu offered on that mobo will be the one you have.

You can always game at a lower resolution and just take advantage of the 1080p for desktop use/web browsing/having lots of windows open and visible at the same time. That's the situation in which I find having more pixels to be the most valuable, anyways.

If have no MXM option then can do DIY ViDock via expresscard slot. Though NVidia Optimus internal LCD and performance tweaks are better suited to a notebook with Intel HD integrated graphics.

Alright, well I guess I'm screwed till I get my laptop.. - think I'll just overclock it to make up for it. I already have 8GB of RAM. would it make a real difference in my games to add more RAM?

8 is more than enough. The GPU is your bottleneck, increasing RAM will have little to no difference, if your laptop is even capable of handling more than 8GB.

Well.. Let me take that back.. Not really screwed. Ill be fine for the time being. I hope to have it for at least two years. And probably GTA IV, Crysis, MOH, Assasins Creed, Black Ops, NFS Hot Pursuit. Intensive games. Hopefully I can still get medium out of most games. MrChowderClam runs games very high setting most of the time but I don't think he has the 1080 screen making a huge difference..
