Haven't seen one floating around, so thought we could compile a list of amazing mods for games. Try and keep it nice and simple, but everything is welcome.

I'll start with a wonderful mod to see how Just Cause 2 handles having an attack Helicopter, grappled to and elevator, grappled to the ground. It gets pretty nuts!!! :D

    Also give you:

Infinite Health (And infinite breath/O₂ ;)
    Infinite Ammo (including grenades)
    Strong Rope (Can't be broken)
Multirope (disable to be able to remove ropes)
    Invisible Crosshair
Change Money/Chaos and Armor/Weapon/Vehicle upgrade boxes

makes for some hectic fun if you have finished the game and bored or just want to spice it up.

Just start and load your save game then go to windows and run the bolopatch.exe in the background and select the options you want.

    BOLOPatch 4.00 (for v1.0.0.2)

My favorite gameplay mod of all time would have to go to Max Payne - Kung Fu 3.0. Running through the entire game without firing a shot is very satisfying.

For total conversions, Ultima V: Lazarus. A remake and expansion of Ultima V on the Dungeon Siege engine. It's buggy and resource-intensive and runs on the foundation of a game that was already long in the tooth when it came out, but it's a great way to experience Britannia on a (slightly) newer game engine. I actually followed the Ultima 6 Project long before I even heard of Lazarus, but Lazarus came out earlier and to this day I have yet to play the Ultima 6 Project...

The Nameless Mod for Deus Ex was a good TC as well, but suffered greatly by being far too into itself.

Generally, though, I prefer to play games vanilla, at least the first time, and I'm getting to a point in my life where very few games get a second time.
