The original Call of Duty and the United Offensive expansion are good. for relatively low requirements, and fantastic games.

Also, all the Unreal games excluding UT3, which is to say: Unreal Gold, Unreal II: The Awakening, Unreal Tournament, and Unreal Tournament 2004.

Half-Life 2 and Counter-Strike: Source. These are the least technically demanding of Source Engine games, and have been known to run comfortably on even integrated graphics, despite looking lovely.

OP, you pretty much hit them all. For a second I thought you forget Deus Ex, but nope...it's there! You also have Mafia as well, which I feel is a really unappreciated game. Well, it went past the radar at least.

Gotta mention Ground Control (+Dark Conspiracy) and Ground Control II

Both games were pretty much overlooked despite getting some good reviews.
They both run great on low-end rigs and look amazing.

GC 1 is actually free, too : http://www.fileplanet.com/promotions/groundcontrol

+ Awesome RTT concept, FPS camera control(!), great graphics, great SP campaigns.

    - GC1 had no skirmish mode at all  . AI in both games just isn't that intelligent. Massgate never drew the crowds.

(Of course Massive's World in Conflict fixed a lot, but I'd love to see GCIII someday.)

    Also... Pre 2005:
CoD, Max Payne 1 & 2, Far Cry, Diablo II, TES III:Morrowind, NWN I, HL1, 2 etc., NOLF2, C&C Red Alert, Doom 3... the list goes on... :)

now for listing of old games that show my age... I'll try to list ones I have always liked that I don't think have been listed...

I loved Might and Magic 1 through 5 a lot (not "Heroes of")
Eye of the beholder 1 through 3 were great RPGs too.
some of the Wizardry's, mainly Crusaders of the Dark Savant
    I liked all the...
    •King's Quests
    •Police Quests
    •Space Quests
    •Heroes Quests (Quest for Glory)
    all the Wing Commanders too...
    Lords of the Realm 2
Master of Orion 2 (and 3)
    Daggerfall
    Betrayal at Krondor
    Star Trek 25th Anniversary Game

I still have all those games and play them from time to time :D Heck most of those will run in DOSbox, so thats pretty low requirements

Wolfenstein: Enemy Territory - I have spend many hours on this game, and one of the reason why I like it so much is that you have to cooperate with your team to complete the teams mission. (E.g. the Allies have to plant a bomb in Axis base to win).

There are many classes to choose:

    Medic

    Covert Ops

    Engineer

    Field Ops

    Soldier

Every single of these classes have their own special quality, but the most important one is the engineer since in almost every map you have to explode something :)

    Try it!

What? No AD&D games? Those are some of the best!

    Baldur's Gate I & II
    Icewind Dale I & II
    Planescape Torment
    Neverwinter Nights

This last one's a bit more demanding but the rest can pretty much be played on any crap setup.
