But I lose all motivation the moment I recall how time consuming installing mods, cleaning them, sorting them, combining them, etc. is. Anyone else feel this way after they quit games like this? What have you done to push yourself over the edge to get it done?

I like to play vanilla usually with just some texture mods so its not too bad but I get the feeling

What motivated me to get back into Skyrim was playing it in 4k resolution. Ive never been a fan of AA so even at 1920x1080 there were some small jaggies. In 4k there are not. Plus it doesnt take much to run the game. A single 880m can run it at 50+FPS most of the time with every setting maxed out and a bunch of visual mods.
For me its about as close to perfect of a game as you can get. It can be as hard or easy as you want, and the sheer openness means you can do pretty much whatever you want. I dont know of any other games that let you build your own houses, get married, adopt kids, level up forever, and play forever as the quests will never run out. Mods extend that to near limitless possibilities, but I have only used visual/audio mods, I dont want to change the core gameplay at all.
As for as mods go, I let steam do almost everything for me. I didnt even realize there was another way to do it?? The only one mod I install manually is the SkyUI mod because I dont like the stock UI. Also I had to use a mod to fix a graphical bug that appears at 2560x1440 and up. The words level up appear in the bottom right of screen, normally off screen at 1920 and lower. -

Yeah there are a lot of other ways to mod it - Check out the STEP guides, those are pretty easy to follow because its step-by-step but they don't cover some of the better mods IMO, like Hot & Cold, Hypothermia, etc. all the immersive mods. I thought about getting back in to it to run ENB since I upgraded my GPU but thinking of all the steps required to get it up and running the way I want it to...is just tiring thinking about it. -
I remember watching a MMOxReview video a couple of months ago that talked about a newer, easier Skyrim mod manager. I'll try to go find the video, if you're not using that manager perhaps you can give it a shot.
Oh and if you just want to get pumped up for Skyrim again watch the reveal trailer. That one never gets old, it's one of the best game trailers I've ever seen. -

The other easy way would be to just copy the entire game folder (might need to copy something else, depends on the set up) after you were done with the game for the time being. Easier to reinstall in the future.
Come to think about it, I too will reinstall Skyrim somewhere in the near future (October/November), after I finish a few other games.
