Assuming they both of same rest specs, which notebook would be faster?
I know the 7979m is alot faster then GTX670m but at the resoluton of 1920x1080, particularly gaming would be a alot more demanding for the GPU then at 1366x768.

Well, the 7970m is twice as fast as a 670m. At the same time, 1920x1080 is about twice the pixels than 1366x768. I would personally get the 7970m as it runs quicker and cooler but at those two resolutions they should in theory run very similar.

Which hardware is being stresses the most on that higher resolution of 1920x1080? Is it mostly only the GPU's ram?

GPU ram is not an issue for 1080p gaming or less in a single monitor so it wont be a factor at all, Go with the 7970m, it's more future proof, 1366x768 is pathetic resolution, even phones started to go higher resolution than that now.
you can still plug your laptop to your HDTV/another monitor lcd and it will perform much better, the 670m wont cut it even if hdmi your laptop to your 1080p HDTV with max settings

670M is not a bad card, but when you compared to 7970m it just fall short.

Wait for GTX675MX which should cost about the same as 7970m price or go with 7970m
