I don't understand this. How can LaptopVideo2go have more updated drivers for nvidia cards than Nvidia.com themselves????

Most of the drivers you see on LV2G are leaked, beta or OEM drivers from NVIDIA.
They modify the drivers to install on originally unsupported hardware, such as mobile video cards.

Every driver has it's good points and bad points no matter where it comes from, I have used both in the past and just picked the one that suits my needs best.
My suggestion is try both of them out and see which ones you prefer, it's relatively easy to swap out drivers in minutes.

So for a desktop card, would laptopvideo2go still work/be better?

laptopvideo2go offers better drivers than nvidia, that's why it even exists.. to make better ones

but they are not officially supported.. so make sure the drivers are good before you use them

They don't MAKE the drivers... They just mod the .inf file of every nvidia desktop driver released so they can be used in notebooks, that's why sometimes they have stability problems, because they are designed for desktops...

Dox (also available through laptopvideo2go.com) mod them even more, improving performance, sometimes at a cost of stability or features.. Anyway his drivers r0x... just find the perfect one for the games you play ;)
