    Does anyone know what the best drivers to use are for the macbook pro? (I have the 256 version).

    The best (meaning most stable) are the Boot Camp drivers (ForceWare version 101.34).

    Keep them unless you're experiencing problems. Then I'd say 162.18 if you're using Windows XP, although you won't be able to overclock.
