Get a Wii with Wii Fit. -
Bejeweled.
Or any of the word games.
My mom really likes RTSes as well as various word/skill games, i.e. Bejeweled, Bookworm, etc.
Psychonauts is awesome, but I'm not sure how well your mother would take to it. -

The Wii sport games are decent for older individuals too. I know a number of friends who have bought the Wii for their parents.

I know lots of people who love the Sims games and got them into gaming in the first place. Plus, a lot of girls I know met through Sims forums and are still friends and gaming together today (one started wow and pretty soon our guild had a slew of new members all who knew this one girl from sims forums).
