Can I connect P-7100fx to two external monitors, one via the VGA port and the other via the HDMI port?

I tried but I cannot make it work.
Maybe I am not sure how to set it up.
Could anyone give me some hints?

I've never seen a notebook that could do this. You have the option of 2 monitors max with the laptop's LCD being one of them typically.

Wow, I could have sworn that it worked on another laptop I had with VGA and HDMI. Maybe this card doesn't support it?

There is NO laptop out there (other than super expensive corporate ones running Quadros) that will allow you to have two external monitors and the laptops own LCD running at the same time.

Your best bet is to look for an external 3rd party solution. These will trick the laptop into thinking its running like a 2560x1024 solution when it's actually a pair of 1280x1024 monitors.

But P-7811fx has two video outputs: VGA port and HDMI. Why can't it connect to two displays? It does not make sense to restrict the use of only one video outputs at a time.

you should be able to use the two externals if you would disable the notebook lcd. just close the lid and try.

If you don't need the notebook's LCD to operate at the same time, then you should be able to connect to a VGA monitor and an HDMI monitor at the same time. Did you use the Nvidia display manager to select screens and resolutions?
