Is there a good docking station for the P-7811 FX? I'd like it to have DVI port if at all possible and support 1920x1200.

I don't believe that Gateway manufactures any docking stations for their notebooks. You might be able to try an HDMI to DVI connector to get 1920*1200 out of your notebook digitally. Something like this:

I would look into a powered USB hub. So all the cables you need to plug in to the 7811 is one usb cable, your video cable, and power (and perhaps audio if you have external speakers).

 Notebooks don't support high speed docking stations (i.e., with support for full speed video) unless there is a special high speed bus connection designed for this specific (docking station) purpose. The 7811 has no such connection and thus cannot connect to any high speed docking station.
As suggested, if your main goal is a DVI connector, you can easily get an HDMI to DVI plug for under $15. I suggest you get the type that has a female HDMI socket and a male DVI plug. This allows using an HDMI cable from the 7811 to the converter plug that will then securely connect to your DVI input. Using the HDMI cable (rather than an immediate HDMI to DVI converter) will reduce the strain on the HDMI socket on your 7811.

A usb hub works great for me. I have the laptop on a desk 24/7 with the battery in storage. A speaker system in the headphone jack, and the power cable sticking out the back.
Keyboard, mouse, and external hard drive in the usb hub. eventually i'll get myself a second monitor as well.
but basically i just pull the usb cord, the speaker jack, and the power.. plug in the battery and i'm on the go.
pretty simple. -

 That cable should work just fine and put no additional stress on the HDMI socket on the 7811.
