Would you see much difference between these speeds or maybe only in certain situations?

I doubt it. Maybe in benchmarks but doubtful in real life. My motherboard also accepts 2400MHz but went with 2133MHz because I got a good deal on a set.

No, Intel CPUs don't really benefit much from faster RAM. On Ryzen, you'd see a 2-3% performance improvement.

Only in synthetic benchmarks would you see any difference, and even then it would be pretty small - less than 5%.

If you pass 2666/2800MHz ram speed + ok timings, you can finally see some small improvements in a few games.
