Are there performance differences between two laptops with the exact same specs, except one has 2GB RAM in 2 slots and the other has 2GB RAM in 1 slot (both at 663MHz)?

Technically yes, because the matching pairs will operate in dual channel unlike the single stick. Will you notice it? Absolutely not.
Maybe a couple points in very very specific benchmarks, but nothing else. The difference between dual and single chanels is only about 2-5% depending on the type of application. If you're doing a cpu intensive task for example, then that difference is almost nothing. -
Dual Channel really doesn't add very much, as adinu said. Its maybe a 5-10% increase in performance in memory specific benchmarks. In real world use you'll only see maybe 2% increase in performance using two 1GB sticks. Either one is fine, it really doesn't change much. It might be slightly cheaper in the long run to just get a 2GB stick so you can upgrade with another 2GB stick in the future.
