I know there isn't for CPU's but I'm looking into buying a 2GB 680M QS for a really nice price and I'm wondering if there's any performance difference when it comes to GPUs?

It completely depends on the revision, model and stepping. For example, my i7-920xm was the exact same revision and stepping as the retail chip so I was pretty confident it would be the same except for its QS status, and probably the fact its been abused to hell in a factory in china somewhere. However, if these numbers are not the same as the retail version, you might notice slight bugs, power issues, stability, reduced active clockspeed or reduced clockspeed headroom. Pretty much all the things that get improved on a QS chip as it proceeds to retail. I would be hesitant to buy a 680m QS simply because the revision details for GPUs aren't as well documented as CPUs. You might need to find somebody who has already got your chip to know for sure.
