I've noticed there are SATA 2.5" caddies for 2x CF cards, 3.5" USB enclosures for 2x 2.5" SATA drives, ETC... BUT
I have yet to find a simple SATA splitter that allows access of 2 drives at once with only 1 SATA connection.
Anything out there??

One SATA port = One SATA drive.
To do otherwise, you need more electronics involved.
(This is not a 'simple' request). -
The closest thing is going to be a PCI-E SATA controller card for desktop PCs. For laptops, you're going to need to use things like a hard drive enclosure / dock connected by USB or eSATA. -

I completely realize it would not be simple, I just don't understand why it would be more complicated than with PATA.
I wasn't sure what other term to use than "splitter" because I'm not trying to convert it or anything.
Just to give you an idea @ kent there are in fact mPCIE SATA controllers for laptops which I guess you didn't know about, so I really don't think this is too far fetched...
Try to think with me for a second, what name would an embedded systems designer call it?
