Best SSD? Depends on your budget. If the sky's the limit, Intel would be my choice.

Taking stability into account, I'd say Samsung 470 or Intel X25-M. Customer satisfaction in general is lower with the 320 and especially the 510.

SATA II: Samsung 470 is faster than Intel 320 and has lower failure rate on Newegg.com.
SATA III: Intel 510 or Crucial M4. Real world performance differences are tiny, I'd say go for the cheaper M4.

What the?! Random performance is so important for everyday usage. What would be the selling point of an Intel 510 or Crucial M4 then?

Intel 510 beats Intel 320 in real world usage.
Intel 320 beats Intel X25-m in most real world usage.
Conclusion: random performance is important but it's not everything.
And during day to day usage, it will be impossible to notice any difference between these drives without using a stopwatch. -

Performance is good. Reliability of Sandforce drives doesn't come close to Crucial, Samsung and Intel.
Check Newegg.com reviews of the Force 3 or Agility 3 for many examples. -

Ah. How about capacity, would getting a 60GB version of one SSD sacrifice a significant amount of speed compared to getting the 120/250GB version of the same?

Yes, a lesser capacity SSD will always have lower performance, if all else is the same. Less channels due to less NAND means slower speeds.

Booting and launching applications will be virtually the same.
Most installation performance will be the same too.
File copying and heavier multi tasking will be faster on larger drives. -
