Noob question: How much total storage will I have in a triple SSD setup configured in RAID 0 if each SSD is 128GB?

The formatted capacity of a single 128GB SSD is approx 119.2 GB so multiply that by 3.

So, 357.6GB total capacity. With the amount of money you'd be spending on x3 128GB SSDs, why not just get a 480GB (or higher) single SSD? Faster than any single 128GB SSD and more reliable (RAID compounds the individual fail rates for each drive). I also suspect that you lose a smaller percentage of advertised capacity as well.

No, you'll 'lose' the same amount of capacity whether one drive vs. (many) more is put in a RAID0 array (~6.877% in either case).
What you'll gain (as rightfully noted) is a faster storage subsystem - unless your storage subsystem requirements/workflows are MOSTLY/ONLY sequential (i.e. not O/S + program based - but more like video/sound (other large file) transfers.

Note that the standings won't change much if RAID'ing more than 2 drives... (when responsiveness is the key performance metric).
