I am looking to buy a 7200RPM Hard Drive to replace the 80GB 5400RPM Drive in this laptop I just got.
My question is- If I sit here and do all the Windows Updates and my games and everything is it pretty much pointless because I will have to do them over again on the 7200RPM HD or do computers have some kind of storage where it can save like 10 GB of windows updates and what not?
Basically-Should I wait to install Windows Service Pack 1 with the new hard drive or does it even matter
Thank you~!

If you want, you can do a complete drive copy from your old drive to the new drive. I normally use Symantec/Norton GHOST but it is not the only program that will do this for you. If you go this route, you don't need to worry, install SP1 and it will be part of the copying-over.

What if I want to install games and other programs such as Itunes?

Yes, get your present HDD fully configured so you can keep it as a fully working backup. Then get a new HDD plus a USB 2.5" SATA enclosure and clone the existing HDD on to the new one. Ghost has already been mentioned although I use Acronis TrueImage. The trial version is fully functional for a month, which should be long enough.
