    7200 gives higher performance.
If you wanna know by how much, you gotte get us some more details and give us the name of the drives you where thinking of, some old 7200rpm are slower than some 5400rpms and some new 5400rpms are faster than 7200rpm drives.
So it all depends on what HDD.

Their are a lot of 7200rpm SATA drives. Their are actually three generations of 7200rpm drives out on the market today, with the 4th generation coming soon.

If you are looking for an upgrade, and you want to know which 7200rpm drives to look at, you should look at these drives in particular:
These are all 320GB 7200rpm drives with 16mb buffer
    The Hitachi Travelstar 7K320
    Western Digital Scorpio Black WD3200BEKT
    Seagate Momentus 7200.3

These harddrives perform very well, with each having their unique qualities.
The Seagate momentus 7200.3 is the most power efficient
The Hitachi 7K320 is the quietest with its three stage cover
The WD3200BEKT has the fastest application loading

Please note that the next generation of harddrives, the 4th generation (500Gb 7200rpm) will arrive on the market within 3 weeks or so.
The current drives listed above can do 65-80mb/Sec of data transfer
The next generation drives will be faster, so expect around 75-100mb/sec

It should say WD3200BEKT or WD32000BJKT in K-TRON's post about 7200rpm drives, he wrote in BEVT twice :)
