I usually do this for my games that I want to move to my ssd but I am wondering if the symlink requres constant lookups on the hdd that would affect performance.

The re-direct would be cached - I don't think it would affect performance any more than any SSD + HDD setup would be affected.
(And SSD + HDD is slower/less responsive to me than a pure SSD setup is). -

Yeah; more responsive, 'overall'.
With a single SSD installed, that is above an SSD + HDD setup w/regards to responsiveness.
With multiple SSD's installed (O/S, Programs, DATA, TEMP/SCRATCH disks) - this setup is faster still than even the fastest single SSD you can buy.
Maxing out the RAM the system has will also affect how responsive the system feels. Don't think to max it out 'sometime in the future'. Do it now and reap the benefits every time you use the system until you sell/donate/dispose of it instead.
ime, when the RAM is maxed out at the end of life of the platform in question? It is usually a waste of $$$$ when real performance and productivity gains are expected (a new(er) platform instead is a much better buy for the long term).
