I'm interested in the MSI GE62VR with the i5 and the 1060 3gb. Will it work well? Or does the cpu bottleneck the gpu?

All mobile CPU's bottleneck most middle/higher end GPU's.
Always buy as much CPU+RAM as you can afford - then; add the best GPU you can for your workloads. -
