How much of a difference does the cache of an HD make on speed and preformance? I'm talking like a 16 to 32 difference.

theoretically, it is supposed to accelerate your read/write performance (in the sense of cache vs no cache). The difference between the sizes is negligible, the main reason for that cache on consumer drives is to store the page table (i.e. larger HDDs will need to have larger caches). However, you may notice HDDs with 64mb caches (currently the largest) are very slightly snappier than ones with same capacity and RPM but smaller caches. That being said, I doubt you will notice due to the inconsistent nature of HDD random I/O performance.
