I'm looking for a 750 GB or 1 TB HDD to store a ton of video on that I'm going to be putting in an external enclosure and want to know if anyone has any recommendations on what brand to go for. Looking at newegg I saw that the prices between samsung, western digital, Hitachi and Seagate are pretty similar and so were the reviews and comments.

I cannot recommend any brand, but I do recommend newegg! When I bought my Hitachi 7k200, they had the best price and were pretty cheap with shipping.

I have a Hitachi deskstar 1000, its a good drive, sometimes my power supply for my external cannot start it, it is rated for up to 500Gb, but the 1Tb drive requires more power.
make sure the enclosure is rated for 1TB harddrives.

also, would it be worth it to buy an expresscard to eSATA adapter to connect the HDD through (a lot of the newer enclosures have eSATA ports). would this be faster than usb 2.0 ? -
I use a Seagate Barracuda 1TB hard drive in an eSATA Enclosure from Vantec. Seagates are generally more expensive because of their slightly longer warranty.
AS for eSATA yes, it'll be much faster than USB. USB tops out at about 20MBps where as eSATA is SATA, so there will be no bottleneck and will run as fast or likely even faster than your built-in harddrive
