I primarily use iTunes which I have learned uses quicktime for their music, which is 16 bit. I bought a Creative Audigy 2 ZS Notebook sound card, and it is 24 bit. What program could I use to take advantage of this card?

I don't think you're comprehending that.
The quicktime software is 32bit in it's programming format. As far as sound quality, that's determined by whatever format the audio file is created in(and the associated properties that you can adjust within various formats).
The 24bit reference of the sound card means that the processor on that card is a 24bit processor. It can process data faster. Doesn't mean it can handle higher quality files than a 16bit soundcard necessarily...just that it can process more data. I theory...it could handle a higher quality sound file, but you're talking a huge file to max out the capabilities of a 16bit card. This is more in reference to handling multiple sets of data at once.
There's more to it than that...but unless you can tell me specifically what you're trying to do...I'm not really sure what you're asking. -

not very many programs actually use 24 bit sound. From my knowledge you can enable 24 bit sound in some DVD programs but even then the likelihood of 24 bit sound in a DVD nowadays is slim. More than that, you also need to have speakers capable of 24 bit sound.

Buy some DVD-Audio discs to play some high resolution music.

65536 discrete volume levels vs 16777216. That would be the difference between 16 bit sound and 24 bit. It would seem that 24 bit could more accurately track transients and rapidly changing waveforms. Could you hear the difference? Not likely, IMHO.

If you do loudspeaker testing a 24 bit 192kHz card would be an excellent interface for test equipment.
