I've looked online and they've all said to keep a battery charged at 40% or so and remove it when using AC for long periods of time. However, if I travel to and from work with my laptop daily but I keep it plugged in almost always otherwise, should I still remove the battery? Also, is it better to keep the laptop plugged in during the day or should I continuously discharge the battery?

Well, most notebooks nowadays won't charge and wear your battery when it's fully loaded and inserted in the notebook. So there shouldn't be a problem at all having it inserted at all times when connected through AC.
It's said that it's most important to fully charge the battery when you've started a recharge-cycle, so you won't disconnect at 70% or 90% charge, but 100% charge not to wear the battery out more than normal.
Other than that, it shouldn't matter if you have used the battery from 100% down to 40% or 1% once you start to recharge it again.
You should discharge the battery once a month to keep it at it's best condition and also to get the most correct readings from your battery on how much batterylife you still have while you're running on battery.
This is what i've been adviced by the manual (and some FAQ's about notebook-batteries) for the batteries that i've bought and they've worked perfectly and holds their charge just fine even after a long while. -
