How would I go about moving all my old files from my old HDD to my new HDD?

What? You don't have a backup system in place? Shocked, shocked shocked!
You can buy/use a USB enclosure if you want to keep using your old HD as storage. You can buy/use a 'drive converter' which converts IDE/SATA drives (both 2.5" and 3.5") to USB and copy your files off like that.
Or, if you have a lot of files, are really impatient and your new/old computer has eSATA connectors, you can get an eSATA enclosure to transfer your files - this will be the fastest compared to USB but you may find that you rarely use it in the future again (eSATA connectors are not that common).
Another 'speed' option, if you have a desktop is put both old and new HD's in a desktop's spare SATA ports (they don't have to be securely mounted for this) and copy away.
I'm sure that one of these suggestions will help you get your data onto your new HD.

Depends too on how much stuff you need to move. If it's just docs and productivity stuff, copy it to a USB drive or use an online storage source like Google's free 1GB or whatever they're up to now. Saves some of the hassle of buying an enclosure if you don't have one.
