Yes, that would work...but before you hit the trigger, check out the RAM Deals thread to see if you can do better.

Yes almost any DDR2-667(PC2-5300/5400) ram will work.

I'd make double sure the T61 supports 2gb modules. And I 'd also get a more mainstream brand like Corsair, Crucial or Kingston. Even OCZ or Mushkin. Patriot and Gskill are relatively newer. I am sure they make some good stuff. But I like to stick to known good parts myself.
ps:Apparently the T61 does support 2GB dimms. Good for you!

I am a little new to upgrading ram in a notebook, specifically at T61. Is there two spots to put in new RAM, one under keyboard and one place on the bottom? If I am going to order a new T61, should I order RAM separately or should I have Lenovo install it?

There is 2 spots, I'mnot sure where - but probably under the keyboard, as my Latitude D531 had it there as well. You should do it, as you can have it for $60-80 instead of whatever Lenovo charges...

+1 that. Lenovo wants absurd money to put it in there. If you search the Lenovo website they have extensive documents on upgrading/servicing all of their products. Even step by step videos! Look under support. You will need to know the 4 digit code on the bottom of your n'book. Like mine is a 3000 c200 2822
