I installed a 64gb mSSD cache on my HP dv6 last month. Now I know SSD's aren't supposed to be defragmented, but that only works if you use it as storage or as the main drive, right? Does that mean I can defrag my hard drive if I have the SSD set as a cache?

If you defrag the main drive, the SSD drive won't be defragged but it might reduce the effectiveness of the cache as things have been moved around.
